Beelistener’s Book of The Month.

I listen to Selina Periampillai being interviewed on BBC Radio 4 recently as she creates a Maldivian Tuna Curry. It sounds really easy to make, and the interviewer is impressed. Given that my own culinary repertoire could do with spicing up a bit, I splash out and buy the book. I’m not disappointed for the curries are subtle, flavoursome, aromatic and very tasty. Everything so far takes a short time to create.

Cooking for Beekeepers.

I agree to cater for the two day NDB Teaching Beekeeping course this week at Cawdor Community Centre. The weather is cold and miserable and so are sandwiches in November. They get hot food, and desserts from my new book. Someone wants to know how I prepare the caramelised pineapple that accompanies the coconut ice cream. I’ve never made ice cream before but this recipe is so simple, and I don’t need complicated or expensive equipment.

Caramelised Pineapple.

I cut up 3 small fresh pineapples into chunks and add to the saucepan which contains 2 tablespoons unsalted butter, and 120g soft light brown sugar (dissolved). I add a vanilla pod split lengthways with seeds scraped out and included. I cook gently till softened and caramelised which takes about 30-40 mins. I’m supposed to remove pan from the heat and add some rum and ignite with a long match and flambe till the flame goes out but I’m chicken. Instead, I add a few drops of rum essence, leave the matches above the stove and hope for the best.
